Like anywhere else in Spain, the people of Girona are a tapas-eating people. Tapas are traditional little finger foods and snacks that are served with liquor. They can range from a few pieces of olives, to bigger portions of gambas ( shrimp ), sausages ( chorizo), cheese, to full meals. All over Girona, one won't have any trouble locating a tapas bar to sample some of the house tapas. In fact, wherever there is one tapas bar, there are guaranteed to be other bars not very far away.
Glossary of Catalan Cuisine
First courses
Amanida catalana - a fresh tossed salad, usually made of lettuce, tomatoes, peppers, onions, and carrots, with toppings of eggs, anchovies, or tuna.
Cal - grilled green onions served with a spicy sauce made from chili, garlic, tomatoes, and almonds.
Canalons - a Spanish version of the Italian cannelloni. This is a pasta dish loaded with a variety of meat and bechamel sauce and topped with parmigiano.
Escalivada - roasted eggplant stuffed with red pepper and onion and smothered in olive oil.
Escudella i carn d'olla - a stew that is a mix of meat, sausages, turnips, garbanzos, cabbage, and a variety of other ingredients.
Espinacs a la catalana - lightly boiled spinach that is fried in oil with raisins and nuts.
Exqueixada - sliced cod salad with olives, tomatoes, onions, peppers, and an olive oil dressing.
Faves a la catalana - broad beans fried in olive oil with mushrooms, ham, and garlic.
Fideos con almejas - noodles with clams.
Fideujat - noodles with fish.
Gazpacho - soup of tomatoes, green peppers, cucumbers, and onions served with egg garnishings and other vegetables.
Pan amb tomaquet - slices of bread smothered with tomato sauce, garlic, olive oil, and pepper.
Paella - a rice dish with various other ingredients and garnishings thrown in, especially shellfish, squid, shrimp, chicken, and pork.
Pimientos de piquillo - red bell pepper that is oven baked, stuffed with a wide variety of ingredients, and then deep fried in batter.
Sopa de ajo - garlic soup with garnishings of egg.
Sopa de bolets - wild mushroom soup.
Tortilla - Spanish omelet made with potatoes and onions and possibly other vegetables.
Entrees
Arros a banda - a dish of rice and fish that is topped with garnishings and then baked.
Arros negre - squid stuffed with rice and cooked in the squid's black ink. The name literally translates to black rice.
Arros amb feseola i naps - rice with turnips and beans.
Arros empedrat - rice cooked with codfish and tomatoes topped with a layer of white beans.
Bacalla a la viscaina - codfish cooked with dried pepper and onion.
Cassolet - stew of pork and beans.
Fabada - white bean stew with chunks of the chorizo sausage and ham.
Girella - a dish of rice and lamb.
Magret - roast duck breast.
Mar y cielo - a stew consisting of various kinds of sausage, rabbit, shrimp, and fish.
Paella - a rice dish with various other ingredients and garnishings thrown in, especially shellfish, squid, shrimp, chicken, and pork.
Peuada - pig trotters (feet) stewed with eggs in a thick sugar sauce.
Suquet de peix - fish stew with tomato sauce and potatoes.
Truita a la navarra - trout stuffed with meat such as ham and then deep-fried.
Xai a la brasa - lamb chops grilled over a charcoal flame.
Xai al forn - lamb baked in an oven.
Desserts
Bisbalenc - cylindrical-shaped puff pastry stuffed with sugared zucchini and coated with pine nuts.
Bombons de music - a tart made of dried fruit and nuts. Usually served with a sweet wine called moscatel.
Carquinyols - hard almond cookies.
Coca - unleavened bread that is oval-shaped and topped with a variety of sweets and nuts. A very popular pastry.
Crema catalana - a kind of pudding sealed with a coating of caramel.
Flaona - a popular pastry from the town of Figueres which is stuffed with cheese or cream.
Flam - a custard made of vanilla and eggs.
Mató - a soft white cheese, usually served with honey.
Panellets - marzipan that is crusted with fruits and nuts.
Pastís de pinyons - a tart made from pine nuts.
Tortell - a large ring-shaped pastry that is covered with a layer of candied fruits, nuts, and stuffed with marzipan.
Xuixo - a cylindrical pastry with cream in the center.
Tapas
Bacallá a la llauna - baked codfish soaking in olive oil and paprika and other spices.
Bull - a kind of sausage made of pork, fat, and spices.
Callos - stewed ox tripe served with slices of chorizo sausage.
Cargols a la llauna - baked snails served in different kinds of sauces.
Cheese - various types of cheese can be found in tapas bars.
Chipirones - battered young squid that is deep-fried.
Empanada - a crusty pastry that is stuffed with meat, potatoes, carrots, eggs, and many other fillings.
Ensalada rusa - a Russian salad of boiled vegetables in mayonnaise and garnished with bits of tuna.
Ensalada de verano - a salad of potatoes, tomatoes, olives, tuna, and basically anything and everything else.
Jamon - cured ham.
Longanisa de aragon - a cured sausage.
Olives - one of the quintessential Spanish favorites.
Patatas bravas - fried potato cubes served with a hot sauce.
Pulpo a la gallega - octupus boiled and then served with olive oil and spices.
Sardinas a la plancha - pan fried sardines served with garlic and parsley garnishings.
Sobrasada - a type of soft, spicy sausage.
